Mimansa's Rajma Masala

In honour of international food day, Mimansa made us a rajma masala – a classic Indian curry that is made with a key ingredient: kidney beans.

   

The Recipe

 Ingredients needed:

Step 1: Soak the kidney beans overnight. Once complete, boil them in water until cooked. Strain the kidney beans, keeping the water aside for later. 
  • 250g kidney beans
  • 2 red onions, diced
  • 3 medium tomatoes, diced
  • 3 green chillies, de-seeded
  • 3 garlic cloves, finely chopped
Step 2: Using a pressure cooker, add the cooking oil, bay leaves, cinnamon sticks, cardamoms, cloves and cumin seeds. Fry on a low heat for a few minutes. Add the  chopped onions, ginger and garlic and simmer until golden brown.
  • 2 tbsp cooking oil
  • 1/2 tsp grated ginger
  • 3-4 cardamoms
  • 4-5 cloves
  • 2 bay leaves
  • 1/2 tsp cumin seeds

Step 3: Add the tomatoes and salt. Continue to fry on a low heat until the tomatoes are well done. 

Step 4: Add the remaining spices and cook for at least 4-5 mins on a low heat.  

  • 1/2 tsp corriander powder
  • 1/2 tsp tumeric
  • 1/4 tsp garam masala
  • 1/2 tsp red chilli powder
  • Salt to taste
  • Corriander leaves to serve

Step 5: Add the kidney beans and water from earlier. Put the lid on the pressure cooker and cook until you hear "two whistles of the cooker." 

Step 6: Garnish with fresh corriander and serve with rice, chapati or naan bread. 

Step 7: Enjoy! 

 

If you don't have access to a pressure cooker, you can cook in an medium sized stock pot or pan with a lid.
